Texturing Milk Without a Barista: Dairy, Oat and Everything After

Plant milks behave nothing like dairy under steam. Getting both right in one machine took two years and a great many ruined jugs.

Dairy milk foams because its proteins unfold under heat and trap air. Oat milk has almost none of those proteins, and foams for entirely different reasons involving starches and added stabilisers. A steam profile tuned for one will wreck the other.

For years the industry's answer was to let the barista compensate. That works when there is a barista. It does not work in a machine that has to serve an oat flat white at 3am with nobody watching.

The system we shipped identifies the milk before it textures it. A short low-pressure pulse measures how the liquid responds, and the machine matches that response against known profiles for whole, semi-skimmed, oat, almond and soy. The full texturing cycle then runs against the right profile.

The measurable outcome is foam stability. Across blind panels, oat-based drinks from the automatic system held their microfoam within nine per cent of the dairy equivalent, where an untuned single-profile machine sat closer to forty.

The unmeasurable outcome matters more commercially: plant-milk drinkers stop being second-class customers. Roughly a third of orders on our deployed machines are non-dairy, and there is no good reason for a third of drinks to be worse.
